Vegan MoFo Day 9: Pumpkin Pancakes with Walnut Maple Syrup


Don't you wish you came over for breakfast this morning? These pancakes were amazing. The recipe for the pancakes is from Vegan Brunch. Isa recommends serving them with a Ginger Cranberry Sauce, but I'm not too into cranberries, so I made my own topping.

Walnut Maple Syrup

2 Tablespoons Earth Balance
1/4 cup walnut pieces
1/2 cup maple syrup

Heat the Earth Balance in a small saucepan until melted. Stir in the walnuts and heat another minute or two until nice and toasted. Add maple syrup and mix well. Keep it on the heat a little to get it nice and warm. Pour over pancakes, waffles, french toast, or whatever you want.

Notice that paw and the intense look? This was taken a second before he hopped over the pancakes to attack the camera strap.
