Vegan MoFo Day 5: When good muffins go bad

 
I can't go through a month of pumpkin without making The Best Pumpkin Muffins from Vegan With a Vengeance (with added walnuts, of course). And, lucky for me, this was the perfect recipe to use the remaining cup of pumpkin I had in the fridge. I used some whole wheat flour to make myself feel a little less guilty about using 9 Weight Watchers points plus on a muffin.

My brilliant idea for these muffins was to quickly mix up the batter last night, pop it in the fridge, and bake the muffins early this morning while I got ready for work. Something went wrong along the way. Maybe it was because I let the batter sit in the refrigerator overnight? Maybe I did something wrong because I made the batter in a rush because Glee was about to start? Maybe it was because I filled the cups too much? Every other time I've made these, I get 18 but this time I just divided the batter between the 12 cups in hopes of getting a pretty muffin top. Whatever went wrong, it's not a complete travesty. They are still delicious, but only one actually came out of the pan intact. With the rest, the tops just popped off and the bottoms have to be scooped out with a spoon. So grab a spoon, there are muffiny crumbles for all!

The Best Pumpkin Muffins
1 cup all-purpose flour
3/4 cup whole wheat flour
1 1/4 cups sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground or freshly grated nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 cup pureed pumpkin
1/2 cup soy milk
1/2 cup vegetable oil
2 tablespoons molasses
1 cup chopped walnuts

Preheat oven to 400°F. Lightly grease a twelve-muffin tin.

Sift together flour, sugar, baking powder, salt, and spices. In a separate bowl, whisk together pumpkin, soy milk, oil, and molasses. Pour the wet ingredients into the dry and mix. Fold in the walnuts.

Fill the muffin cups two-thirds full. Bake for 18 to 20 minutes, until a toothpick or knife inserted in the center comes out clean.

 Makes 12 kitten-head sized muffins.

  4. mmm, this is one of my favourite muffins recipes. I have made it with the addition of whit chocolate chips before but not walnuts. Will have to try that!

    Susan, I think I'm confusing him! I bring the food to him but won't let him eat it. I'm so mean! It's easiest when he's sleeping or just waking up.
