Vegan MoFo Day 11: Pumpkin, Rice, and Bean Enchiladas


These enchiladas were inspired by a recipe I saw in Better Homes & Garden's cookbook, 365 Vegetarian Meals. I made a few changes, but the basic outline is the same.

Pumpkin, Rice, and Bean Enchiladas

Pumpkin mixture
1 teaspoon olive oil
1 small onion, finely chopped
1/2 jalapeno pepper, finely chopped (discard seeds if you don't want it spicy)
2 cups pureed pumpkin
1/2 to 1 cup vegetable broth
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt

 Rice and Bean mixture
1 teaspoon olive oil
1 small onion, diced
2-3 cloves garlic, minced
1/2 jalapeno pepper, finely chopped
1 bell pepper (red, green, or a mixture of both), diced
1 1/2 teaspoons chili powder
3/4 teaspoon ground cumin
1/2 teaspoon salt
1 teaspoon Mexican oregano
1 1/2 cups red kidney beans, rinsed and drained
1 cup cooked brown rice
1 cup chunky salsa

12 corn tortillas, softened
1 to 2 cups salsa

In a medium saucepan, heat oil over medium-high heat. Add onion and jalapeno. Cook, stirring occasionally, until onion is soft and translucent. Stir in pumpkin, 1/2 cup of broth, and spices. Cook until thoroughly heated. Add more broth, if needed. The consistency should be like applesauce or a little bit thicker.

Meanwhile, in a large skillet, heat oil over medium-high heat. Add onion, garlic, and peppers. Cook until the onion is soft. Add spices, stir, and cook a minute more. Mix in the beans, rice, and salsa and cook for a few more minutes.

Preheat oven to 400 F. Coat a large baking dish (or two smaller ones) with a thin layer of salsa. Place a tortilla in the salsa and flip to coat. Place a few spoonfuls of the pumpkin mixture and a few spoonfuls of the rice and bean mixture in the center of the tortilla. Roll up and place seam side down in the baking dish. If there is any pumpkin mixture left over, spread it over the top of the tortillas along with the extra salsa. Bake 15-20 minutes.


This picture had me cracking up. It was taken mid-meow. He was freaked out by the light on the ceiling bouncing off my flash reflector.

And on another exciting note, I received my order of soy curls today! I ordered a couple of bags from Food Fight Grocery a while back and loved them. So instead of buying a couple and then paying for shipping on a regular basis, I figured I might as well just buy a huge bulk box so I can be sure to have them on hand for quite a while. I am SO excited!

 That's gotta be at least 8-10 kittens worth!

  3. That is a gigantic box of soy curls! We can't get them here in Australia, so when I was in the US earlier this year I bought three packets of Butler Soy Curls but I still haven't used them!

    Also, that is the funniest photo of your kitten. Ha!
