VeganMoFo Day 4: Totchos

Sometimes you just need something quick and tasty. Sometimes you need to eat hot fresh food but don't have much time. Sometimes you need to satisfy your nacho craving but don't have tortilla chips. Sometimes you need tater tots. And it will be okay. Because you have totchos.

What are totchos, you ask? Tater Tots + Nachos = Totchos. Yes, totchos combine the potatoey goodness of tots with the melty cheesy goodness of nachos. Sure you can do your basic totchos with some salsa and daiya melted over the top. Or you can put lots of stuff on top! pretty much anything you'd put on a taco would be delicious here, but here's what I did:

I promise there are beans in there, they're just hiding under the ooey gooey daiya.


Totchos
1 Package Tater Tots
1 teaspoon olive oil
1 medium onion, chopped
1 bell pepper, diced
a couple of handfuls of frozen spinach
1 (15-oz) can black beans
taco seasoning to taste
salsa
daiya cheese, pepper jack flavor (or whatever vegan you like best)
1 scallion, chopped
1 avocado, cut into small cubes

Start cooking tater tots according to package directions.
When the tots have about 10 minutes left, heat the olive oil in a medium-sized skillet. Add the onion, pepper, spinach, beans, and taco seasoning to taste. Cook 5-10 minutes or until everything is hot and the flavors have come together.
Take the tater tots out of the oven and transfer however many you want to a bowl or plate. Top with bean mixture, salsa and cheese (you might need to pop it in the microwave for a few minutes if the heat of the beans isn't enough to get the cheese melted). Sprinkle scallion and avocado on top just before eating.

  6. Well I'll be damned if this doesn't look like the best thing ever. We don't have tater tots here, but i bet this would be awesome with this: http://matamig.blogg.se/images/2008/potatiskroketter_1209738691_4014363.jpg as well.

    Oh, and your kitty has grown soo much! He has the same color and fur (kind of, perhaps a bit longer) as my cat.
