Hey everyone! VeganMoFo has taken off to a great start. I'm loving all the posts I've been seeing. You all are awesome! Today I have a really quick and easy recipe for you all. This is one of those recipes you can switch up in all sorts of ways and it'll still be delicious--use black beans instead of red, add broccoli, replace lime juice with lemon etc. It's delish, I promise.
Red Rice and Beans
2 teaspoons olive oil
1 red onion, chopped
2 cloves garlic
1 red pepper, diced
1 (15-oz) can or 1½ cups small red beans or black beans
2 cups cooked rice
1 Tablespoon chili powder (reduce if you don’t like it
spicy)
½ teaspoon paprika
½ teaspoon cumin
1 Tablespoon lime juice
¼ cup cilantro, chopped
1cup tomato sauce
salt and pepper to taste
salt and pepper to taste
In a cast-iron skillet, heat the olive oil over medium heat.
Add the onion and garlic and cook until the garlic is lightly browned. Add the
pepper and beans and turn the heat down a little. Cook for about 5 minutes and
then stir in the rice. Cook for another 5-10 minutes until the pepper is tender
and the beans are a little browned and crispy on the outside. Add the rest of
the ingredients and cook for another 5 minutes to let the flavors come together. Done!

ReplyDeleteI bought a bunch of small red beans on sale, but for some reason, they always turn out awful. I'm going to give this one a go.
This is great comfort food. Adding to my list of recipes to try out.
