Vegan MoFo: Tofu and Quinoa



This is the dish that I am totally obsessed with right now. It's just amazing. I previously thought quinoa was just okay, but once I tried this I loved it! The first time I cooked it was for this dish. Make it!

I got the recipe at a Vegetarian Expo. Here it is:
2 cups Quinoa
2 blocks extra firm tofu, pressed and cut into small cubes
1/4 cup tamari
1/4 cup diced red onion
1 scallion, chopped
1/4 cup cilantro, chopped
1/3 cup peanut oil
1 Tbsp lemon juice
1 tsp oregano
1 tsp cumin
1 tsp salt
red pepper flakes and black pepper to taste

-Rinse quinoa, add to 4 cups of boiling water, reduce to simmer, and cook for 15 minutes or until water is absorbed.
-Place tofu into a bowl and pour tamari over the top and toss. Marinate for 45 minutes.
-Place marinated tofu on cookie sheet and bake at 350° for 15 minutes or until slightly crispy
-While quinoa and tofu are cooling, chop scallions, cilantro, and red onions.
-In a small bowl, whisk together remaining ingredients.
-In a large bowl, mix quinoa, tofu, and veggies; pour the dressing on; and mix.
